Nut free cranberry, lime and coconut balls.

'Tis the festive season and these are a healthy alternative to "white Christmas".
This version is nut free but feel free to substitute the pepitas for almonds. I just used whatever was in my cupboard!
Equipment:
Food processor
Ingredients:
- 1/2 cup pepitas
- 1/2 cup sunflower seeds
- 2/3 cup dried cranberries
- 1 cup desiccated coconut, plus 2 tablespoons to roll in
- 2 tablespoons coconut oil
- 1 tablespoon maple syrup (or other sweetener)
- 6 drops lime essential oil
- optional: 2 tablespoons of flaxseed meal (high in omegas)
Method:
Process the cranberries, pepitas and sunflower seeds until finely chopped.
Add all remaining ingredients and pulse to combine.
Roll into balls and roll in extra dessicated coconut to coat.
